Fast tomato quiche

It often has to go fast in the evening and you still want to have something delicious and warm on your plate. And you can not only feed on cheese toast 😉
Two dear colleagues recently brought me a great idea: a spicy, yummy tomato quiche Puff pastry .
Go jerkily, be vegetarian and super delicious.

My interpretation of the matter looks like this:
Preheat the oven to 180 ° C top and bottom heat or 160 ° C convection. Grease a springform pan (26 cm diameter) with butter.
Place a fresh puff pastry from the chiller in the mold and cover the bottom and edge with it. Prick with a fork several times.
2 tb medium hot mustard spread on the floor (I do not really like mustard and was skeptical at first, but it tastes good not senfig and ensures neat Pepp!).
Depending on the taste about 5 solid tomatoes (if they are too mushy, if necessary, remove the cores) remove from stalk and cut into slices, then layer in a tile-like manner.
With plenty of freshly ground black pepper and Italian herbs b> season.
150-200 g of feta cheese crumble over it.
Bake in the oven for about 25-30 minutes, until the top is crispy, the cheese is brown and the tomatoes are tender.
Tastes hot and cold alright. In addition a green salad and you have a great meal!
Original come probably also black olives on it, but I have omitted for taste reasons 😉
